Native starch is a fine white powder with a neutral odor and taste, which is derived from maize, wheat, tapioca, potato, waxy maize, and high amylose maize. It is located primarily in the seeds, roots or tubers, stem pith, and fruit, and acts as a major energy reserve for plants. Native starch is employed as a binding, thickening and gelling agent that offers freeze-thaw stability, moisture retention and anti-staling properties. Moreover, it is insoluble in cold water and swells to different degrees depending on the temperature. Owing to these properties, it is currently being utilized in various food and non-food applications.
Starch represents one of the most abundant sources of carbohydrate which is used for preparing dishes such as soups, custard, sweets and sauces.
